Cauliflower and Curry Soup
For a change of pace, here is an excellent soup that you can make when you aren’t sure what to do for dinner! Credit goes to @beees.life on Instagram, and this amazing recipe has been shared with her approval. Add any additional spices or veggies you like for an easy, year-round meal!
Ingredients:

1 yellow onion

1 head of cauliflower

1 head of broccoli (optional)

2 T flour

½ tsp chopped garlic

2T butter
-
1-2 cups of chicken broth

2 T paprika
-
2 tsp curry powder
-
1 c of coconut cream (can substitute heavy cream)
Directions:

Chop up your onion and in a large pot, saute in a drizzle of olive oil and a pinch of salt and pepper.

Coarsely chop your cauliflower (or broccoli, if you are using), and mix with the onions in the pot.

Sprinkle the flour over all items in the pot and mix.

Add chopped garlic and butter, coating and mixing the ingredients together.

Pour in enough broth to only barely cover the vegetables (use whatever amount of the broth you have).

Bring to a boil, and simmer until tender (2-4 minutes).

Add 2 or more T of paprika and 2 or more tsp of curry powder. Mix well.

Add coconut cream or cream substitute and salt and pepper to taste. Add more spices if you want even more flavor.
